Summer is officially here! And not a moment too soon, if you ask us. Time to break out the strawberries, maxi dresses and Pimm’s and start revelling in the long summer evenings that lie ahead.
Of course, if you’re planning a summer wedding then the official start of the season is all the more exciting! Even if your wedding isn’t until next year, this summer is the perfect opportunity to start thinking about your wedding menu. Use the next few months as a chance to try out fresh and seasonal flavour combinations. Here are some of our scrumptious suggestions for you to try.
To start with, transport your guests to Italy or Greece with sharing plates of courgettes sprinkled with crumbled feta, tomato and mozzarella drizzled with good extra virgin olive oil, and bite-sized bruschetta. It’s a simple, relaxed and (most importantly) delicious way to start the dining proceedings.
Many couples choose to opt for a roast dinner as their main course as it’s always a crowd pleaser; however, for the summer, we think that you need to pick something a little more fresh. How about a light chicken casserole, served with cherry tomatoes and cannellini beans? Enjoy this lighter option with greens and polenta mash or simply with some good bread for a filling second course.
Summer doesn’t necessarily have to mean fruit or sorbet (although both are good options!). How about an almond sponge with cheesecake mix incorporated into it, served with a fruity compote and Chantilly cream? It’s not too heavy but it’s certainly decadent, making it the ideal way to round off your meal.
Quench your thirst
Iced tea is an excellent summer option and can be served as either an alcoholic or a non-alcoholic beverage. You could also freeze your iced tea into ice lollies, offering guests a fun way to cool down and enjoy a tasty treat at the same time.
